Sharbat Khakshir

Sharbat Khakshir is a traditional Iranian drink made from the seeds of the khakshir plant, also known as teff or flixweed. This refreshing beverage is especially popular during the sweltering summer months, as it is believed to have cooling properties that help the body endure the heat.

The drink is prepared by soaking the tiny, reddish-brown khakshir seeds in water, often sweetened with sugar or honey, and flavored with rose water or saffron.

The seeds, suspended in the clear or pale amber liquid, add a delicate texture and a beautiful speckled appearance to the drink. This creates an intriguing contrast of smoothness and a subtle, earthy crunch that is both pleasing to the eye and the palate.

Ingredients
  

  • 2 tablespoons khakshir seeds
  • 2 tablespoons unrefined cane sugar, or honey. Adjust to your taste.
  • 4 tablespoons hot water
  • 1/4 teaspoon saffron threads, ground and bloomed with 1 tablespoon hot water

Instructions
 

  • Place the khakshir seeds in water and let them soak for about 30 minutes. After soaking, carefully drain the water, removing any floating seeds or plant matter.
  • Dissolve the sugar in hot water, then set it aside.
  • Choose two decorative glasses and fill each with plenty of ice. Divide the soaked khakshir seeds, sugar water, and saffron water evenly between the two glasses.
  • Top off each glass with cool water.
  • Stir well and enjoy your refreshing drink!

Notes

Alternatively, replace the saffron water with 2 teaspoons rosewater.
