Lubia Polo – Rice with green beans and beef

Ingredients: 6 tablespoons ghee or butter,; 1 onion, (diced); 1 teaspoon turmeric; 4 cups fresh green beans, (150 g) (cut into 1 inch pieces); 1 pound stewing beef or lamb (450 g) (cubed, about 1 inch pieces); 2 teaspoons salt; 1 teaspoon pepper; 1 teaspoon cinnamon; 6 tablespoons tomato paste; 4 tablespoons fresh lemon juice; 2 cups basmati rice, (370 grams) (soaked for one hour or up to overnight); 2 tablespoons salt, (for parboiling the rice and will be rinsed out); 2 tablespoons ghee or butter; 2 medium potatoes, (peeled and sliced in 1/4 inch thick rounds)
